my friend, melanie, made fun of me for sending out a "recipe sharing" email. she told me she would give me all the recipes i wanted if she could skip the chain mail. i'll probably take her up on that offer, because i already have two recipes from melanie and both of them are yummy. i decided to make one of them today to take to my family's easter get together.
here is the recipe as i got it from mel, but i'm giving andrea permission to change it up any way she wants to. she likes to throw in flax seed, wheat flour, applesauce instead of butter, tree branches, twigs...you know.
cream together
1 1/2 cups butter or margarine (yes, that's 3 cubes, probably why they're so good.)
1 1/2 tsp vanilla
3 eggs
add
1 cup brown sugar
1 cup granulated sugar
3 1/3 cups flour
1 1/2 tsp baking soda
1 sm. pkg. instant vanilla pudding (this is the greatest ingredient. use the powder...don't make the pudding up. i think this ingredient is what makes them soft and chewy. yum!)
stir in
chocolate chips...and the best kind is GUITTARD in the silver package, which is milk chocolate. GUITTARD brand has the best ingredients, once again andrea, i know brien likes semi-sweet (gag) for which i would still recommend the GUITTARD brand. i get no commission from them, but i am a chocolate chip expert. this brand is yummy, more pure, and no more expensive.
okay, back to the cookies. put small spoonfuls on ungreased cookie sheets. (are there any cookies that go on a greased cookie sheet? why do recipes always specify that?)
bake for 8-10 minutes at 375 degrees.
i prefer my cookies a little on the lighter side (in color, not calories, of course), but these cookies are even yummy when they're darker. give them a try, see if you like them. if you do, you're welcome. if you don't, blame melanie...it's her recipe.

I've never heard of that brand. I always use Ghiradelli. Hmmm. Maybe I'll have to change it up and break up the norm....

yes, kristina, they are soft & chewy. i think that's the magic that the vanilla pudding powder brings to the mix.
I am completely intrigued by these. I like the idea of the pudding mix and I notice that the amounts are more than the normal sized nestle batch, so I will end up with lots of cookies to potentially share. I will have to try this out (with whole wheat flour and flax , but I haven't ventured into the world of applesauce substituting for oil) after we gorge ourselves on Easter candy (lucky for our waistlines the town ran out of peeps), but we are exercising more, so those two activities should cancel each other out and we won't gain as much weight from our binge eating activities.
